Can Anyone Help me?

Food Blogger Friends in crime,

I need an intervention. I'm not in the mood to bake or cook dinners for my family this week. I can't figure out why. Nothing sounds fun or exciting or even yummy to make...I'm bored.

If you have any delicious recipes that are fun, fast and easy for dinner, please pass them my way. I'd love to try something new that'll spark my interests again. Hopefully, this drought won't last long!!!

  1. Oh man! That is no fun!!! Though...I am not going to lie, every once in a while we frequent Cafe Rio or Chickfila way to much in a week:)
    As for easy recipes...here are four of my favorite easy meals...

    Sausage and Penne Pasta
    1 box of penne pasta-cooked al dente
    1 lb. italian sausage (we usually use mild-perfect for kids) We have also used chicken instead of sausage and tastes great as well!
    1/2 of green and red pepper sliced (feel free to use more, my kids don't love the peppers so we don't put a lot)
    1/2 of a red onion sliced
    1 garlic clove minced
    1 teaspoon basil
    red pepper flakes-put as much as your family likes (we only put one shake in-so it isn't to spicy)

    Cook sausage while pasta is boiling. Add peppers, onions and seasonings. Cook until veggies are soft.

    The sauce we use is the alfredo sauce that I posted the recipe for before...here it is again...

    3 Tablespoons butter
    2 Tablespoons flour
    1 quart Heavy Whipping Cream
    1 1/4 cup Parmesan cheese
    1 teaspoon chicken bouillon
    pepper to taste

    Melt the butter and then add flour. Once roux is created add the cream. Once warm, add cheese and chicken bouillon. Stir on low until thick.

    Mix all together and serve.

    Lemon Pasta
    1 box of any type of pasta

    ½ cup olive oil

    lemon zest

    Juice from one lemon

    ½ cup green onion-chopped

    ¼ cop fresh parsley-chopped

    Salt and freshly ground pepper

    about 3/4 cup of Parmesan cheese


    Marinade:

    ½ c. olive oil

    1 clove garlic, minced

    2 T. Cajun seasoning

    2 T. lemon juice

    2 T. minced parsley

    1 T. brown sugar

    1 T. soy sauce

    2 chicken breasts


    Marinate chicken in zip lock baggie for at least 3 hours. I always like to just pull my chicken out in the morning, mix it with the marinade and let it sit all day.

    While cooking your favorite type of pasta, grill up the chicken, and then chop it up.

    Drain pasta, add olive oil, lemon zest, lemon juice, parsley, green onion, salt and pepper, chicken and parmesean. Mix and serve!

    Tomato Basil Tortellini
    Pancetta or Prosciutto, chopped and fried up
    1 clove garlic chopped
    1 cup cherry or grape tomatoes sliced in half
    3 fresh basil leaves chopped
    Saute garlic in about 2-3 tablespoons of olive oil. Then add cherry tomatoes and pancetta or prosciutto.
    Cook tortellini as directed on package.
    Drain and add tomato mixture, basil, and sprinkle with about 1 cup of Parmesan cheese.
    Delish!

    Cream Cheese Enchiladas
    Chicken Breasts-shredded
    1 8 oz block Cream Cheese
    1 can Green Enchilada Sauce
    1 can Black Beans-rinsed and drained
    2 cups cooked Rice-we cooked rice with juice from one lime and the lime zest. Also we added about 1/4 cup of chopped fresh cilantro.
    6-8 Tortillas

    First off mix the chicken, cream cheese and enchilada sauce together and set aside.
    On tortillas layer about 1/4 cup of rice, then black beans (as much as you would like) and then about 1/4-1/2 cup of chicken mixture. Then wrap them up and lay seam side down on 9 x 13 baking sheet. Continue until mixture is gone. Top with a little bit of Mexican style cheese.
    Bake at 375 for about 25 minutes covered. Then uncover for about 5 minutes to brown cheese.

  3. When I don't feel like cooking, our favorite treat is hawaiian haystacks.
    Make rice and chicken gravy (I add chicken to the gravy, it takes care of chicken hogs in my family!) When those are done, I put everything in bowls and everyone helps themselves to what they like.
    Layer Chinese chow main noodles on the plate, rice, chicken gravy mixture than top of the rice. Everything is topped with:
    green onions, coconut, tomatoes, bell pepper, olives, mushrooms, pineapple and sliced almonds. (you can use whatever veges you like best, but the pineapple and coconut are what makes it so good! Everyone makes their own haystack and enjoy. This is my children's favorite meal and the one most requested. I can even use my home canned chicken or rotisserie chicken instead of cooking fresh if I want to. It is very versatile. You can also use fresh chicken breasts and sautee them with the onions and bell pepper. Then put the chicken on top of the rice and gravy.
