Cinnamon Banana Pancakes

My family really likes bananas.  Well, maybe that's an understatement...we are completely in {LOVE} with them!  Seriously!  I tend to buy about 3 bunches each week and we go thru them ALL!  Amazing, I know.  Well, One week, I decided to make some yummy banana recipes, and bought 5 bunches!  HOLY COW!  I had to wait for the extra bananas to turn that yucky brown spotted look before they would even taste good in a recipe, right!?  ...and then I forgot about them!  Sheesh!  I can't believe I do that!  Uh, yeah, can we say busy life!?  So, instead of making the millions of banana recipes I was craving (don't worry, they'll come some day) I decided to freeze my bananas and make this recipe instead. My bananas are still awaiting usage in the freezer, too.

If you've never frozen a super-ripe banana before, let me first warn you.  DO NOT freeze with the peel ON.  You will regret this later, I promise!  If you freeze with the peel on it becomes an ooey gooey mess and is just disgusting to get out of the peel!  Instead, I peel the over-ripe banana and place it on a sheet of saran wrap and roll a couple of times...then I add another banana and roll a couple of more times. I continue to do this until I finish up the sheet of saran wrap I tore off.  Usually, I only do this with three (3) bananas at a time, since most recipes I use call for that many (or it will say 2 and I add one more for good measure...remember banana LOVER)!  Then I stick all my rolled-up bananas into a gallon freezer bag, label it, and toss it into the freezer for later use.  When you're ready to make your banana recipe with your frozen bananas, just pull out a pack of  bananas un-roll and either let sit out until defrosted, or nuke in the microwave. SUPER SLICK!

On to this pancake recipe that was super duper YUMMY!  I was browsing blogs and came across this recipe on THIS website.  If you like banana bread at all, you will LOVE these pancakes!  They taste almost identical to banana bread, but with that touch of butter and maple syrup...all I can say is HEAVEN!!

I was surprised at how easy and fast it was to throw it all together and cook them up.  Of course, we're a banana-loving family, so I had to add MORE bananas than the recipe called for, which if you like bananas at all, I highly recommend it.  What makes this recipe even BETTER is that it is originally from Cooking Light!  Sweet!  Delicious AND healthy!
