I did add the water, plus a bit extra because I found that it helps activate and moisten the ground flax seed. You're welcome to not add it, but in the batches I've been making the cookies turn out better when I add that bit of water into them. It's abo...I have a Skip Dr, hand crank version. It's about $15 on Amazon and you can buy replacement buffing wheels for it for about $10. Each wheel does about 20 buffs or so. You MUST use the spray fluid generously and be steady and consistent with your cranking. I make sure the disc masks at least two full revolutions in the Skip Dr. Sometimes a really bad scratch will need a couple tries, but I've been really happy with the results. I have never added it since it's omitted in the instructions and my cookies have always come out great.
