This is by far the BEST and easiest roasted pumpkin seeds recipe I've found. It's basic, no-nonsense goodness. I seriously can't wait to make mine. I'm counting down to when we'll be going to the pumpkin patch to pick our pumpkins.
2 c. washed pumpkin seeds, spread out on a foil-lined cookie sheet to dry completely.
Dry 1 day.
2 tbsp. oil OR melted butter
1 1/2 tsp. salt
Mix oil and salt with seeds. Bake on cookie sheet about 40 minutes in 350 degree oven. (You can salt lightly after cooking, too if you'd like) Enjoy!

Roasted pumpkin seeds have been a tradition in our home for 35 years! The kids call every year for the 'recipe'!
