Sloppy Janes

Hi all! I wanted to introduce you to one of my FAVORITE family recipes.

This gem of a recipe is the little, healthier sister of Sloppy Joe. Her name is Sloppy Jane!
She's packed full of grated zucchini and grated carrots and onions! All super duper healthy AND don't we all have zucchini coming out our ears right about now in our gardens!? This is such a great way to use those little babies up!

Okay, so seriously, I was NEVER a fan of sloppy joes EVER! I hate the greasy, slimy, ick! This version is so amazingly healthy and you'd never know the difference! The flavors of the spices pack such a punch that the vegetables are cleverly hidden where even the pickiest of eaters won't notice they're eating veggies! Yahoo!

SLOPPY JANES

1/2 lb. ground hamburger or ground turkey (you could even use tofu if you so desired!)
1 c. grated carrots
2 c. grated zucchini
1/2 onion diced OR 2Tbsp. dried minced onion
2 Tbsp. Brown Sugar
2 Tbsp. prepared mustard
1 Tbsp. Worcestershire Sauce
1 tsp. chili powder
1/4 tsp. salt
1 small can tomato sauce
3/4 c. ketchup

Brown meat, onion, carrots & zucchini. Drain liquid well. Add remaining ingredients and stir well to combine. Simmer for 10-20 minutes.

Serves 6-8.

For those Weight Watchers loyalists (yes, I used to be one and still try on occassion), this mixture without buns is only 2 points per serving!

  1. You gave me this awhile ago and I never tried it. I am going to have to put this on the menu this week. You KNOW i have zucchini to eat up :)
